This pretty dessert/appetizer soup is a cool summer treat for a hot August evening!
Peach Soup
2 fresh Ontario peaches, peeled and halved
1 cup plain yogurt
2 tbsp frozen orange juice concentrate
1 tbsp liquid honey (optional)
fresh mint leaves
In a blender or food processor, process peaches, yogurt, orange juice concentrate, and honey (if using) until smooth. Garnish each serving with mint and serve immediately. Makes 4 desserts or appetizers.
