Another delicious condiment from Evelyn's kitchen. This relish is wonderful on it's own or with your favorite meats.

Sweet Pepper Relish

12 red peppers
12 green peppers
12 medium-sized onions

Finely chop and mix together the above ingredients and place into a large bowl. Sprinkle with a small amount of pickling salt. Pour boiling water over mixture and let stand overnight. Drain and rinse well under cold water.

Add:
5 cups sugar
3 cups vinegar

Place mixture into a large saucepan and over medium-high heat and stirring constantly cook until soft and thick. Remove from heat and pour into sterilized jars to ¼ from rim.
