This is a Whittamore favorite. It's a wonderful way to enjoy our berries fresh or frozen! Try a slice with a generous scoop of vanilla ice cream.
Whittamore's Strawberry Tea Bread
2 cups all purpose flour
1-1/2 cups rolled oats (not instant)
1 tsp cinnamon
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
3 eggs
1 cup granulated sugar
1 cup vegetable oil
1 tsp vanilla
2 cups fresh or frozen Whittamore's strawberries CRUSHED! (about 4 cups whole berries)
Mix together flour, oats, cinnamon, salt, baking soda and baking powder; set aside. In a large bowl, beat together eggs, sugar, oil and vanilla; stir in dry ingerdients just until mixed. Add strawberries and stir to combine completely. Pour into 2 greased and floured 8x4 inch loaf pans. bake in a 375 degree oven for 45 to 50 minutes until tops are browned and firm to the touch, and cake tester inserted in center comes out clean. Run knife around edges of loaf pans; let cool in pans on rack for 10 minutes. Turn out onto rack and let cool completely. Makes 2 loaves.
